Last night I decided it was time to get in the spirit of Halloween. I picked up a couple of pumpkins and got baking while Pete carved his Jac o lantern.
One thing we never have in our house is healthy savoury snacks. We have crisps, but nothing healthy and moreish like toasted pumpkin seeds.
So here’s a quick and easy method:
1– Using a serrated knife, cut off the crown.
2– Scoop out the seeds and fleshy bits. I did buy a pumpkin carving set which included a scoop but in the end it was easier to just use my hand!
3 – Rince the seeds in cold water in a sieve to get rid of all of the fleshy bits.
4 – Lay the seeds out on a baking tray; sprinkle with a dash of oil and whatever seasoning you fancy. I went for salt, pepper and paprika but chilli flakes would be delicious too!
5 – Pop them in the oven on a medium heat for around 10 minutes or until they’re golden brown.
6- Take them out of the oven and leave them to cool. Once cool, pop them in a bowl and tuck in while watching a movie! It’s that quick and simple!
They could also be sprinkled on a homemade vegetable tart, pumpkin soup, or if sprinkled with cinnamon or sugar – over your pumpkin pie!
